Soft-shelled turtle, particularly the ¡° soft-shelled turtle with cauliflowers ¡± in spring and the ¡° soft-shelled turtle with osmanthus flowers ¡± in autumn, is nutritious enough for its rich protein, fat, sugar and vitamin.
